Tuxedo Brownie Cups


Here's the recipe for those of you that wanted it after trying these out at the Pampered Chef Party! Thanks again for coming- it was fun!

Ingredients:
1 package (19-21 oz) fudge brownie mix (plus ingredients to make cake-like brownies)
2 squares (q oz each) white chocolate for baking
2 tbsp milk
1 package (8oz) cream cheese, softened
1/4 cup powdered sugar
1 cup frozen whipped topping (thawed)
1 pint small strawberries, sliced
Orange zest, mint leaves, melted semi-sweet chocolate for baking (optional for garnish)

Directions:
1. Preheat oven to 325ยบ F. Spray cups of mini-muffin pan w/ nonstick cooking spray for baking. Prepare brownie according to package directions for cake-like brownies. Place level scoops of batter in each cup, filling cups about 2/3 full. Bake 14 minutes or until edges are set (do not over bake).

2. Remove pan to cooling rack. Immediately press tops of brownies with mini-tart shaper to make indentations. Cool in pan 15 minutes. Loosen edges and gently remove brownies from pan. Cool completely, wash pan, spray with cooking spray, and repeat baking w/ remaining batter.

3. Microwave white chocolate and milk, uncovered on HIGH for 1 minute, stir until smooth. Cool slightly. In a bowl combine cream cheese and powdered sugar; mix well. Gradually stir in white chocolate mixture until smooth. Fold in whipped topping.

4. Fill Decorator fitted w/ closed star tip w/ the cream cheese mixture. Pipe cream cheese mixture into cooled brownie cups. Arrange strawberry slices on top. Garnish as desired. Place in airtight container and refrigerate 1-3 hours before serving.

Yield: 4 dozen

Tips and hints :-)
  • I like to use raspberries on top as well as strawberries.
  • Instead of buying the squares of white chocolate I buy the white chocolate chips and then measure out 2 oz w/ my handy weight measure I bought at the Dollar Tree
  • If you want to use the mini-muffin paper liners then make sure you thoroughly spray the insides with cooking spray- otherwise most of the brownie will stick to the paper.
  • If you ever want to borrow my mini-tart shaper, the easy accent decorator, and/or the mini-muffin tin just let me know!
